100124 Duck Hot Pot

I had January Cooking Class on 1/24.
The menu is
Duck Hot Pot
Porridge
Sweet Potato Roll

This Duck Hot Pot class is a regular class I have every year per students request.
Because it is little bit hard to make ground duck from whole duck. But this hot pot taste great and all my students love it.

After we finished Duck Hot Pot, added steam brown rice into the pot and simmered with soup, add egg, green onion and dried anchovies. This is yummy!

Crape rolled with sweet potato cream.

Everyone enjoyed Duck Hot Pot and nice talk about how to raise kids too.

091213 New Year Dishes Class

I had a new year dishes class today. Some dishes require long preparation time, I already made some dishes by last night.

The menu is
Simmered black bean/Kuromame
Sweet Potato with lily bulb/Yurine Kinton
Marinated vegetable/Namasu
Kelp roll/Kobu Maki
Beef roll/Yahata maki
Simmered vegetables/Iridori
Crab sushi
Clear soup/Zouni
Tofu cheese cake

I cooked using a pressure cooker and it took much shorter cooking time than regular pot.

I added lily bulb to sweet potato and it added variety of textures.

I added persimon and it added nice sweet taste.

This dish is cooked in dried mushroom's soup stock which adding nice flavor.

Crab sushi

I got live crab which was more than two pounds, I boiled it and took out the meat. The crab meat added nice taste and flavor to the brown rice sushi.

I made first soup stock last night and added giant clams to this soup. The clams added so much condensed umami flavor to this soup.

Tofu cheese cake

This is healthy cheese cake using silk tofu, adding light texture. If you cook simmered black bean, you can add them in this cake when you bake. It will be the black bean tofu cheese cake and it is my family's favorite during this season.

I had a cooking class today and the theme was "Built Immunity Power".

I had two new students today and one person needed to leave early. I was little bit nervous but we finished cooking at 11:30am and everything was very smooth. I hope today's immunity tip will help to prepare healthy dishes.

I had September Cooking Class today and had two new students.

Mabo Tofu/Sichuan Style
This is very spicy but you can adjust spiciness to change the spice amount.

Everyone enjoyed today's dishes and we had fun talk about how to raise children. I showed my toys I made for my children when they were in kindergarten. I got a request to have a hand craft class from today's student.

This is very good for allergy and has vitamin A & C. After we made shiso juice, we made shiso sansho chirimen too. This is good with steamed rice or rice ball.

I had July Cooking Class Today.

Today's menu is
Chicken Plum Miso
Simmered Enoki w/Tororo Kobu
Tororo Tempura
Plum Rice/Ume Gohan
Yam Plum Salad
Okara Cookies

I baked okara cookies last night because it was very hot today. There were some happenings but we could make all dishes in time.
今日はとても暑かったので、昨晩おからクッキーを焼いておいた。いろいろハプニングはあったものの、無事に全部の料理を作り終わった。

This plum miso is very handy and can use for other items too.
この梅味噌はとても便利で、他の素材にも使うことができる。

I choose short cooking time dishes today for Summer season. Also I used plum pickles for many dishes today and it will help to have appetite in a hot day.
We talked about house grown vegetable today and I prepared mint tea. Everyone liked it and I gave a mint pot to everyone.
今日は夏向けに、調理時間の短い料理を選んだ。暑い日に食欲が出るように、梅干を多く使った。
今日は野菜作りについての話題で盛り上がり、畑のミントで冷たいお茶を用意した。皆に好評だったので、鉢植えのミントを持って帰ってもらった。

090419 April Cooking Class

I had April Cooking Class today and today's theme was Bamboo Shoot. Bamboo Shoot is seasonal and I got very fresh one.
今日は4月のCooking Classをやり、テーマは竹の子。 竹の子は今が旬でとても新鮮なものが手に入った。

The menu is
Mentai Pasta
Bamboo Shoot Steak
Bamboo Shoot Tempura
Bamboo Shoot Salad
Bamboo Shoot Miso Soup
Red Bean Roll Cake

I had two new students today and everyone worked together pretty well.
We finished all meals before noon.
The Mentai Pasta is the request from one of the students and she cooked this item today and she was very happy. I hope she can make it by herself in the future.

Also the Plum Miso dressing was very tasty and everyone liked it. I decided to add this item to the plum class in May.

One of the new students came from San Francisco and I appreciated her effort to come to my class despite 45 minutes long driving. I felt her passion to learn cooking.

今日は新しい生徒の方が二人参加されたが、皆さん協力してとてもうまく料理ができた。すべてを12時前に作り終えた。
明太子パスタは生徒の一人の方のリクエストで、彼女が今日はこれを担当し、出来栄えにとても満足してハッピーだった。これからは、自分で作れるようになってくれたら嬉しい。

サラダに使った梅味噌ドレッシングがとても好評だったので、5月の梅干のクラスでこれもやることに決めた。

新しい生徒さんのうち一人の方はサンフランシスコからで、45分のドライブにもかかわらず来て下さったのはとても有難い。彼女の料理を習いたいという情熱を感じた。

090301 Hinamatsuri Cooking Class/ひな祭りクラス

I held the "Hinamatsuri Cooking Class" today which means Girl's Celebration Day in Japan. We celebrate the girl's day on the March 3rd every year in Japan.
今日はひな祭りのクラスをやった、これは日本の女の子のお祝いの日。毎年、3月3日にお祝いをする。

Today's menu is
*Sushi Ball
*Green Vegetable with sesame
*Simmered Okara/Bean Curd Refuse
*Clam Clear Soup
*Soy Yogurt Tiramisu

I got a house grown Meyer's lemon and I used lemon juice for the sushi rice. It made the sushi rice taste more mild and added nice lemon flavor.
知人の方からマイヤーズ・レモンをいただいたので、それを使って寿司米を作った。このおかげで、味がマイルドになり、レモンの香りが加わった。

This is traditional vegetable dish in Japan.
これは日本の伝統的な野菜料理。

This is the home made okara I made this morning. Because of this fine okara, this dish taste much better than regular one.
これは今朝作ったおからを使った。その自家製の細かいおからのおかげで、いつものおから和えよりも美味しい。

Clear Clam Soup/蛤のすまし汁

I made first soup stock from kelp and bonito flakes and added clam shell. This is very tasty soup and did not need to add lots of seasoning. Just little salt and soy sauce.
一番だしを昆布とかつおぶしからとって、そこへ蛤を入れた。これはとても良い出汁が出ていて旨味があるので、そんなに味を付ける必要がない。少しの塩としょうゆのみ。

Soy Yogurt Tiramisu/ヨーグルト・ティラミス

I made soy yogurt from home made soy milk used "soy milk maker". Home made soy milk taste great and I can make tasty yogurt as well. Also I used home made okara for the base and this is very healthy dessert.
先日買った豆乳メーカーを使って豆乳を作り、その豆乳からカスピ海ヨーグルトを作った。自家製の豆乳はとても美味しくて、おかげで美味しいヨーグルトができるようになった。このティラミスには自家製のおからをベースに使ったのでとてもヘルシーなデザートになった。

One of today's students recommended me to open healthy Japanese restaurant. Because my dish is very tasty and health cautious. She said that if I opened Japanese restaurant she would love to stop by every weekends. I need to think about it for my next career.
今日来てくれた生徒さんの一人が、是非日本食レストランを開くべきだと勧めてくれた。私の料理が美味しくて、健康のことを配慮しているから。彼女はもし私がレストランを開いたら毎週末にでも行きたいと言ってくれた。次に何をやるかを考えるリストに、日本食レストランも入れなくてはいけないと思った。

090219 Miso Cooking Class Part3

I had Miso Cooking Class part3 today. This is additional class for the person who could not come on the original date. I had only one person and it took about two hours for whole process.

今日はお味噌のクラスパート3をやった。これは追加のクラスで、予定していた日に来られなくなった方のためにやったもの。今日は一人だけだったので、全部で2時間かかった。

This is S-san's miso.

I made a bonito flakes and daikon leaves pizza for lunch. It was tasty.

お昼にかつおと昆布のふりかけピザを作った。今日のにはさらに大根葉のお漬物も入れた。
美味しいと好評だった。
